The Shun Classic 12" Hollow Ground Brisket Knife with Wooden Saya is a simply designed specialist that slices larger cuts of meat better than anything else. The long, medium-deep blade has a very fine, straight edge with hollow ground indents to reduce drag and food adhesion. It will slice through, and support the most delicate cross-cuts of barbecued brisket, ham, large roasts and even dry-cured hams and smoked salmon. The long length makes it possible to create even, straight and thin slices in fewer pulls, for smooth, professional results. A custom-made wooden Saya (sheath) is included to protect the keen edge in storage. Hand washing is recommended to preserve the fine edge and long-term preservation of the handle. And like all Shun Classic blades, it includes and is backed by a limited lifetime warranty.
